Chef Tony Rayner has years of experience as a Pastry Chef. Born in the small village of Caterham, England, he went on to attend and graduate from Croydon Technical College. Chef Tony came to the United States to work as the Pastry Chef at Sun Valley Lodge in Idaho. From there he went on to work in Boise, Idaho and eventually to Seattle, Washington where he met his wife, Pat. In Seattle he held various positions with several well known wholesale bakeries and patisseries, including Famous Pacific Desserts, Alki Bakery and Parisian Star Desserts.
Pat 's background is in management, customer service and sales of bakery ingredients and chocolate. While working for a Belgian ingredient and chocolate manufacturer, she became an eager student of chocolate techniques. She was mentored by Yves Keyaerts, a talented and passionate Pastry Chef. He opened the doors to the world of chocolate for her, introducing her to some of the world's most talented chocolatiers and pastry chefs and teaching her the basics of chocolate. She continued her education with hands on classes in technique and recipe formulation.
It has long been the dream of Chef Tony and Pat to have their own shop. In 2012, the opportunity presented itself and they decided to follow their passion. When you step into the shop you can see, smell and taste that passion.
